Crispy Homemade Fish & Chips

We love fish & chips!  – it was surprisingly simple to make, and so delicious.

The secret to the ultra-crispy batter is a combination of baking soda and bubbly soda water, this is what gives the first the crispy texture you are looking for!

For a cocktail party, try cutting fresh fish into small bits for bite-sized fish and chips to dip in tartar sauce.  

The tartar sauce was homemade.  It was the first time I make it! Below is the link to the site I got it from. 



Crispy Homemade Fish & Chips


Ingredients

3/4 cup all-purpose flour, divided
500gr of preferred fish fillets 
1/4 tsp baking soda
pinch salt
1/2 cup soda water
canola oil, for cooking
Salt, pepper, paprika, per taste

Method

Put 1/4 cup of the flour into a shallow dish. Cut the fish fillets on a slight diagonal into 1-inch wide strips.

In a medium bowl, whisk together the remaining 1/2 cup flour, baking soda, salt and other spices and soda water – the mixture should have the consistency of thin pancake batter.

In a heavy pot, heat about two inches of oil until it’s hot but not smoking. Pat the fish strips dry with paper towel and dredge in the flour, shaking off any excess. Dip one or two pieces at a time in the batter to coat well and gently place in the oil. Cook, turning as needed, for 4–5 minutes, until deep golden and cooked through. Transfer to paper towels to drain and cool, then sprinkle with salt.

Serves 4.

Rolled Fish Fillet




Ingredients
3 fish fillet
Green, red and yellow pepper thin sliced
1 onion, thin sliced
Salt
Pepper

Method:

Wash well the fish fillet and place them in a clean surface. Cover them with a transparent paper and start thinning it by pounding it softly with a meat mallet until looks like in the picture.
Cut it in half since it will be big and place in the middle strips of onion, and peppers as you desire. If you wish, you can add other veggies like carrots, etc.

Roll them up and place them next to each other in the baking pan.

Now for the sauce:
2 medium tomatoes
3 bunches of cilantro
2 garlic cloves
Condiments as you like as: salt, pepper, red pepper, cumin, paprika, etc.
1/4 cup lemon juice
If you want it to have spicy flavor you can add chilli
4tbsp Canola Oil

Method:

Blend them all together and pour them on the rolled fish fillets. Decorate them dish with slices of lemon just like shown in the picture and bake between 30 and 50 minutes.


Very good with white rice on the side!

Fish with Coconut Sauce


This recipe is from a site that I lovee! it has so many Ecuadorian recipes! Just like Colombian/Latin ones.. I have tried few and will post it later.. As for this recipe, its sooo unique! I never cooked fish with coconut milk so I was hesitant, but I trust Laylita and I was sure it was going to be a success..! It didn't take time at all and not many ingredients were involved. I added shrimps to it just because I love it!

Ingredients:


1kg lbs fresh fish fillet, cut in medium size chunks
¼ cup lime juice, from about 2 limes
Juice from 2 oranges
4 garlic cloves, crushed
1 tsp cumin powder
1 tsp paprika
1 tsp ground coriander seeds
2 tbs canola oil
1 medium sized onion, diced
2 yellow bell peppers, diced
4 , peeled and chopped
1 can of coconut milk
3 tbs cilantro, finely chopped
Salt to taste
Side dishes rice and fried ripe plantains


Method

  1. Mix the lime juice, orange juice, crushed garlic, cumin, paprika, coriander powder and salt in a small bowl.
  2. Marinate the fish chunks for 1 – 2 hours.
  3. Heat the oil to prepare a refrito or base for the sauce, add the diced onions, tomatoes, bell peppers and salt, cook for about 5 minutes on medium heat.
  4. Add the coconut milk to the refrito, mix it in well and cook for about 10 minutes, if you prefer a thicker sauce you can thicken the sauce by adding ½ tsp of corn starch.
  5. Add the fish fillets, cover partially and let simmer for about 20-25 minutes.
  6. Sprinkle with cilantro and serve with rice and fried ripe plantains (if you like to!).
