Summer Salad

Hello everyone! :)

Sorry, I have been away for a while.! I was visiting family back home with my family :) We had a blast and I miss them so much already!

While I was there, I did this delicious salad.  I named it Summer salad just because I have no name for it haha! It was refreshing, and so full of color and life.. just like summer! :)

It is easy to make!  Hope you enjoy!




Summer Salad
Ingredients:

- 1 can asparagus
- 1 can beets
- 1 can palmito
- 1 can baby corn
- 1 can artichoke
- 3 tomatos, cut in medium sized cubes
- 3 cucumbers, cut in medium sized cubes
- 2 cups of lettuce, washed and cut for salad
- 1 cup of Parmesan cheese, cubed
- 2 avocados

For the dressing:
Olive oil
Balsamic vinegar
Mustard
Honey (little)
Salt

Preparation:

Mix all ingredients but the asparagus and avocado.  Pour dressing and mix slowly.  Decorate with avocado and asparagus as desired.

Tri Color Pasta Salad

Quick, easy and delicious salad.  Full of color and taste!  

Great for parties and side dish wish any meal, and also with barbecue.




 Tri Color Pasta Salad

Ingredients
  • 350gr tri-color rotini dried pasta - cook and drain as instructed in package
  • 3 tomatoes, diced
  • 1 can black olives, sliced
  • ¼ cups red onion, finely diced
  • 3/4 cup parmesan cheese
  • 8 fresh basil leaves, cut into strips
  • 4 tablespoons basil pesto
  • 2/3 cup creamy Caesar dressing
  • 2 teaspoons sauté spice (equal parts black pepper, salt, and garlic powder)
  • ½-1 cup toasted pine nuts (I omitted this, but next time will use!)
Directions
  1. Cook pasta and coat with Caesar dressing while warm. Add the rest of the ingredients (minus the pine nuts) and toss. 
  2. Top with toasted pine nuts. Refrigerate until ready to serve.

Russian Salad

This is a very delicious salad and a very good side dish with everything! Mostly it is made to accompany beef and poultry recipes, specially grilled barbeque.

There are so many variations of this classic potato salad, some even without the potatoes, but this one  is the main one we make at home: potatoes, peas, carrots, and mayonnaise. I like to add a little bit of vinegar, sometimes lemon juice.

Some people add to it eggs, pickles, apples, green onion, depends on the taste.  Add any if you love it!


Russian Salad
Ingredients
2 large potatoes, diced
3 carrots, diced
1 cup and half of frozen peas
handful of chopped parsley
1 cup and half of mayonnaise 
Salt
1 teaspoon and half of white vinegar
Olive oil


Method
Cut the vegetables into cubes and cook them in boiled water separately, because each has its own cooking time. The ideal point is al dente.

Place cooked vegetables in a bowl.
 
Season with olive oil, salt, vinegar and then add the mayonnaise and the parsley.  Mix gently to avoid any veggies from breaking out/mashing.

Serve cold.

Mozzarella and Broccoli Salad

Hey everyone! Apologies for my lack of posts! I was on vacation for a month and now I am back home!

This recipe was done by my sister. Its super easy and delicious!

Mozzarella and Broccoli Salad


Ingredients
Iceberg Lettuce - washed/drained and cut
Broccoli - Steamed/Boiled

Can of Baby Corn

Canned Red Beans - washed

Can of Palm Hearts - washed and sliced

Fresh Mozarella

Dressing

Olive oil
Balsamic Vinegar Salt and pepper

Method

In the serving plate, pour a layer of lettuce;
In a separate bowl mix the corn, beans and sliced palm hearts along with the broccoli. Pour half the dressing on them and mix. Pour the mixed veggies on the lettuce spreading them along it. Put on top of them the mozzarella balls, if you want you can slice them or make them square as you like.. Then spread other half of the sauce on top of everything.

Shrimp, Avocado and Mango Salad

This salad was an invention of mine to try and copycat the salad that is served at Le Pain Quotidien which is a French franchising restaurant/bakery

The salad is so colorful, tasty and its ingredients are to unique!! I love anything with fruit - mango, pineapple, any fruit!

So lets get into business and try to make one that tastes the same! of course, we are making it beautiful too!

Shrimp, Avocado and Mango Salad
(serves 2 persons)

Ingredients

12 cooked big shrimps (if you like to add more, please do, it depends on the person)
1 ripe avocado
1 mango
3 tomatoes
Rocket leaves (as desired)
Olive oil
Pinch of salt
1 lime

Method

First, cut the avocado in half, peel it, remove the pit, and slice it. Reserve in a plate.



Next, peel mango and slice it as desired, depends on how thick you would like to have it.


Now, cut the tomatoes small cube sized pieces and reserve.


In a separate bowl, mix the washed and drained rocket with the salt, olive oil, and lime. Add to it the cooked shrimps, and mix well so that the shrimps are coated in the sauce.



Now the fun part, put all ingredients in your plate. I did this way:
